What's the difference between the Sense and Hero ROMS I'm seeing on XDA? Are sense roms made for the mytouch, are they faster? I'm confused on the difference.

Hero roms are from the HTC hero.
SenseUI is the name HTC gave to their user interface that you see on Hero aka Rosie.
Used interchangeably on all android forums, the term sense is also frequently used to mean Sapphire Sense. That's in regards to the latest HTC Sapphire(magic) dump. It's a little bit different in regards to the stock hero rom, but for the most part will run and look the same.
It's not necessarily faster, and most developers when making their "hero" roms , will find a middle ground , incorporating many different aspects from many different roms into one, calling it their own. Most developers will however "base" their own roms off of a specific build, giving the build a title (ex sense rom's are roms built off of a sapphire dump, while hero roms are built off of a hero dump)
