There are some paid apps now that allow you to sync with an exchange server. But, I'm not sure if this includes contacts. The descriptions only mention email and calendar.

I imagine (but I've not tried this) you can just turn off contacts syncing in Menu -> Data synchronisation, and uncheck Contacts. You can then log into your Google account online and delete all your contacts to remove them from anywhere online. You can still add/remove contacts from your phone, but it won't be backed up anywhere.

Well if backing them up is all you need, there are a load of backup apps on the market. I use My Backup Pro by rerware.com which backs up (among lots of other things) Contacts to the SD Card. You can then connect the phone to your computer, mount the drive, and copy the backup zip off the SD card. My Backup Pro is a paid app. There is a 30 day free trial version of it too. I can recommend it, but perhaps someone else will know of a good free app that backs up contacts.
